Quick Summer Dinner Ideas for Easier Weeknights

Spicy Fennel Linguine Salad
Ingredients 4 people:
320gr Linguine
1 tab Fennel Pesto Fresco SIPO
50gr Crunchy Peanut Butter
1 Habanero thinly sliced
1 Lime, zested and juiced, divided
200gr baked tofu, cut into bite-size pieces (If you can’t find baked tofu, simply cube firm tofu and sauté until lightly crisp.)
1 mango, pitted, peeled and thinly sliced
1tbs chopped Coriander leaves SIPO
Preparation:
In a large pan add 30gr of salt to the boiling water and add the Linguine, stir from time to time until cooked “al dente”, check the cooking time according to package instructions.
Rinse with cool water and drain.
In a large serving bowl, whisk Fennel Pesto Fresco SIPO, peanut butter, lime zest and juice. Add drained Linguine, Tofu, Jalapeño thinly sliced, mango and Coriander and toss to coat with dressing.
(Make Ahead: Linguine Salad can be stored in an airtight container for up to 3 days. Add a few tablespoons of warm water and toss to loosen dressing.)
