Quick Summer Dinner Ideas for Easier Weeknights
These fast summer recipes give you more time for what really matters: margaritas, sunsets, and pool time.
LEMON ROASTED CHICKEN WITH FENNEL, AND POTATOES
INGREDIENTS
70ml Extra virgin olive oil
4 large bone-in chicken thighs
1 pot Fennel Pesto Fresco SIPO
Salt and pepper
1 Artichoke
2 Lemons
450gr Fingerling Potatoes
1 Fresh Fennel SIPO, cutted into chunks
4 Sprigs Fresh Thyme SIPO
Chopped Fresh Parsley SIPO
INSTRUCTIONS
Set oven to 180C.
Drizzle 1 Tbsp. olive oil on heavy, rimmed baking sheet. Place thighs on sheet pan with room between them. Season well with salt and pepper. Roast 15 minutes.
Meanwhile, thinly slice one lemon and juice the other one. Measure 4 Tbsp. of lemon juice and whisk in 3 Tbsp. Extra virgin olive oil. Season with salt and pepper--save!
Put artichokes, potatoes, fennel, thyme, and lemon slices,50ml Extra virgin olive oil, salt and pepper in bowl and toss.
After roasting the chicken for 15 minutes, dump vegetables around chicken, filling empty spaces around chicken in single layer, keeping lemon slices near center.
Continue roasting until chicken is crisp and all are cooked through, about 30-40 minutes, add the Fennel Pesto Fresco and leave in the oven for 5 minute.
Divide chicken and veggies among 4 plates and sprinkle with parsley.
