Best Pumpkin Soup
Ingredients:
1 tablespoon Extra virgin olive oil
1 medium Onion
8ooml of Vegetable broth
1 tablespoon of fresh Ginger peeled and chopped.
4 cloves chopped Garlic
1/2 teaspoon Nutmeg
1 teaspoon of turmeric
4 spoon Pumpkin seeds
n.1 Pomegranate
some leaf of Coriander
2 tabs of Yellow Pumpkin Pesto Fresco SIPO
200ml Single Cream
1 tablespoon of corn starch and 1/4 cup of water
Salt & Pepper
Instructions:
Chop the onion finely and sauté on high with Extra virgin olive oil until very soft and just starting to turn golden. Add the garlic and ginger and sauté for 1 minute.
Add the vegetable broth, nutmeg, turmeric and the Yellow Pumpkin Pesto Fresco SIPO, mix well.
Bring to a boil, then reduce heat to medium low. Leave uncovered and relax for 50 minutes while you pretend, you're still cooking.
After soup has simmered, combine water and corn starch until thoroughly mixed.
Increase heat and add corn starch slurry to soup. Boil until thickened (a couple of minutes) remove from heat and then add the single cream.
Take an immersion blender and very carefully blend all the ingredients to make is smooth and creamy.
Serve the soup with some grains of pomegranate, one spoon each portion od pumpkin seeds and a few sprigs of coriander.
