They are very famous, at least in the raw food world. They are original, simple and light. And if they don't seem like anything special, you haven't tried them with the right sauce!
1. Slice the courgettes into thin slices with a mandolin or a food processor. Their function will be to replace the pasta, so better if you can do it for a long time, obtaining strips instead of washers as I did: they will look like rasagnole or nice wide tagliatelle. Otherwise, even very thin washers are fine.
2. Put them to drain in a colander placed on a pot
3. Drain the courgettes well, put them in the pot with the SIPO Pumpkin Pesto and season, stirring well with a wooden spoon. Serve!
